Native starch is naturally found in many grains and vegetables. It is a polymeric carbohydrate, and it consists of numerous glucose units joined by glycosidic bonds. As an ingredient, starch is used in various food products valued for its innate functionality, including thickening, stabilizing, or emulsifying properties.
