The product contains a range of organic acids which enhance the sensorial properties of food and can help maintain fresh taste over shelf life in various food products. Secondary benefits include spoilage bacteria, yeast, and mold control.
CytoGUARD® YM is non-GMO, gluten-free, allergen-free, and dairy-free. It has been extensively tested and proven highly effective at protecting the flavor and quality in products like baked goods, dairy and non-dairy, cheese, dips, salsa, and hummus and inhibiting the growth of yeast and molds in those products.

Yeast and molds are capable of invading crops, grains, nuts, beans, and fruits before harvesting and during storage, as well as contaminate processed food, like baked goods or dairy products. Both yeast and molds can cause deterioration and decomposition of foods producing abnormal flavors, smells, and fungi growth in products. Yeast and molds are so widespread because they can grow in diverse environments. The major requirements for fungi growth include a broad temperature of 10-35 °C (50-95 °F) and pH 2-9 levels.
CytoGUARD® YM, a natural extract, contains a range of organic acids. These organic acids have a flavor modulating effect and can help maintain fresh flavor over shelf life. The organic acids also have been shown to suppress yeast and mold growth.CytoGUARD® YM has been successfully tested in baked goods and bakery fillings, frostings, and inclusions. Additionally, recent tests have demonstrated the ability of CytoGUARD® YM to maintain the fresh qualities of dairy products such as sour cream and cheese, refrigerated dips and salsa.
Usage levels of CytoGUARD® YM depend on the application. Typical usage levels range from 1% to 2% depending on the application. CytoGUARD® YM is water-soluble, easy to use and incorporate into food products. It is heat-stable and can be used in food products with pH between 3 -7.
CytoGUARD® YM performance was tested in a natural salsa consisting of tomatoes, onions, fresh cilantro, lime juice, and salt and pepper. Control product had no added preservatives.CytoGUARD® YM effectively maintained the fresh salsa taste and sensorial properties over 36 days of refrigerated storage. Additional benefits included yeast and mold inhibition over shelf life.
